Growing up I remember buying the Quaker packs of flavored oatmeal, so I had to create the flavor in a healthier high-protein balanced breakfast that combines fresh strawberries with creamy milk for a delicious breakfast in less than 10 minutes. This version of strawberries and cream oatmeal is made low-carb, gluten-free, and vegan, but is so creamy and delicious you’ll never miss the oats. Filled with plenty of fiber, healthy fats, and protein to keep your blood sugar balanced and hormones happy. Such a sweet, fresh, and creamy way to start your day!

Recipe Tips:

  • I always stock up on frozen riced cauliflower from Costco and Trader Joe’s
  • I like to prepare my no-oatmeal ingredients in a pot the night before so they are ready to cook in the morning to make it even easier

  • I made this with fresh strawberries but you can also make it with frozen strawberries

Ingredients
  

  • 1 cup frozen cauliflower rice
  • 1 cup strawberries chopped
  • 1 tbsp coconut flour
  • 1 tbsp chia seeds
  • 1 serving vanilla protein
  • 1 serving collagen peptides (optional for more protein)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup milk

Instructions
 

  • Chop strawberries
  • Add frozen riced cauliflower, 1/2 of the strawberries, chia seeds, coconut flour, vanilla extract, salt, and milk to a small saucepan
  • Cook on medium until warm, thick, and creamy (about 5-10 minutes) Often it will look like it needs more liquid but the frozen cauliflower will melt and make the perfect texture
  • Add to a bowl, top with remaining strawberries, nuts or nut butter, and a splash of milk or cream
