Sweet potato and chickpea veggie burgers are flavorful and filling. They are perfect for meal prep and you can enjoy them on a bun, wrapped in lettuce, on a Budda bowl, on top of a salad, in a wrap, or even as a quick snack. While I love a good burger I sometimes get a craving for a veggie burger. I have found there are more and more veggie burger options at grocery stores, but the nutritional labels are filled with tons of preservatives and things I cannot pronounce. So I wanted to create a filling and flavorful burger that vegans and meat-eaters would both enjoy. My steak-loving husband ate my healthy plant-based burgers all week, so I am confident that everyone will enjoy these tasty veggie burgers. These veggie burgers are easy to prep and are plant-based, vegan, gluten-free, and filled with plant-based protein.

Sweet Potato Chickpea Veggie Burgers are made with:

  • Sweet potatoes: I use about two medium-sized sweet potatoes
  • Chickpeas: 1 can of chickpeas for plant-based protein and fiber
  • Cannellini beans: 1 can of cannellini beans for a softer bean that also adds plant-based protein and fiber
  • Onion: I prefer a sweet onion in this recipe
  • Bell pepper: on diced red, yellow, or orange pepper
  • Jalapeno pepper: add a little spice with a jalapeno
  • Rolled oats: to thicken the burger add rolled oats or grind them into flour
  • Flaxseed: make flax eggs with a little ground flaxseed and water to hold the burgers together
  • Spices: in this recipe, we will use basil, oregano, cumin, paprika, salt, and pepper

How to Make Sweet Potato Chickpea Veggie Burgers

  • Cook sweet potatoes in the microwave, oven, or Instant Pot. I prefer them roasted- here is how I make the perfect roasted sweet potatoes
  • Chop peppers and onion
  • In a small bowl add ground flaxseed and water, stir, then set aside to thicken
  • Heat a pan on medium heat then add oil and sauté peppers, onion, and garlic until soft
  • Drain and rinse beans
  • In a large bowl, add beans, cooked mashed sweet potatoes, beans, rolled oats, peppers, onions, flaxseed, and spices
  • Mix all ingredients—I often use my hands to mash it up a bit and smoosh the beans
  • Form into burger-shaped patties and place on a lined tray
  • Chill in the fridge or freeze for about 30-60 minutes, or you can leave them in the fridge overnight to set
  • Heat skillet on medium-high heat and add oil, then cook patties on each side until golden brown and a little crispy

Substitutions:

  • Use 1 jalapeño or substitute for a habanero pepper for a little spice
  • If you don’t have flaxseed you can also use chia seeds to make chia eggs

Recipe Tips:

  • I like to roast my sweet potatoes and then peel them—here is how I make the perfect roasted sweet potatoes
  • You can grind oats in a blender to make it a flour if you don’t like the chunky texture of oats
  • I like to meal prep these and then freeze them on a tray, then store them in a freezer or a stasher bag and warm them up in the toaster oven or air-fryer when ready to eat

Taste and Texture:

These sweet potato burgers are sweet and savory with just a little bit of spice. If you like a smoother texture make sure to blend the oats into a flour before mixing and mash up the beans to your liking.

Serve and Store:

I like to freeze the patties on a tray until solid then transfer them to a container or stasher bag so it is easy to get out a single serving when needed.

Heat up burgers on the stove, in the air-fryer, or oven when ready to serve.

Serve these burgers on a bun, wrapped in lettuce, on a Budda bowl, on top of a salad, in a wrap, or even on their own as a quick snack. I like mine with avocado, pickled onions, lettuce, and ketchup, while my husband likes them with mayo, avocado, and mustard. They also taste great with guacamole and salsa!
