  • Oats: use gluten-free oats to keep this recipe gluten-free
  • Shredded coconut: I used unsweetened but sweetened would work too
  • Chocolate protein: a healthy source of protein

  • Almond butter: full of heart-healthy fats, improves skin health, and helps to keep you satiated

  • Chocolate chips: if you are looking to make this dairy-free, look for chocolate labeled vegan or dairy-free

Recipe Tips:

  • Substitute maple syrup for honey or 8 Medjool dates soaked in hot water for a few minutes then drained
  • I use cacao powder because it is a superfood with lots of antioxidants, however, cocoa powder will work just as well.
  • Keep these dairy-free by using vegan chocolate chips

Chocolate Raspberry Protein Bites

Servings 18 truffles

Ingredients
  

  • 1 cup oats gluten-free
  • 1/4 cup shredded coconut unsweetened
  • 1/4 cup cacao powder 
  • 1 scoop chocolate protein
  • 1/4 cup almond butter (the drippy kind)
  • 1/2 cup frozen raspberries
  • 3 tbsp maple syrup or honey
  • 1/2 tsp salt
  • chocolate chips

Instructions
 

  • Add oats, coconut, cacao powder, chocoalte protein, almond butter, raspberries, sweetener, and salt to a food processor
  • Process for about 1-2 minutes until it becomes a dough
  • Put the dough in a bowl and mix in chocolate chips with a spoon
  • Form dough into 1-inch balls
  • Place protien bites pn a tray and then place them in the fridge or freezer to harden. Store healthy truffles in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months
