Cake Batter Protein Bites

These no-bake cake batter protein bites are super fun and best of all they taste just like birthday cake but are gluten-free and high in protein! 


I’m not a big cake fan, but in college, it was a tradition to make funfetti box cake for birthdays.

These cake batter protein bites are reminiscent of my funfetti days, only they are filled with good-for-you ingredients and no sugar rush. Best of all, healthy cake batter bites require no baking and are made with 6 real food ingredients.

These cake batter bites are high in protein and healthy fats which make them a filling snack that satisfies your sweet tooth.

  • Oats: a complex carb that is high in soluble fiber, can aid in weight loss, and lower blood sugar levels
  • Almond flour: a grain-free and gluten-free flour that is higher in protein and fiber
  • Shredded coconut: use unsweetened shredded coconut
  • Cashew butter: Made with natural cashew butter the only ingredients are cashews and salt
  • Protein: For a protein boost use vanilla protein and collagen peptides
  • Honey: an unrefined sweetener you can also substitute for maple syrup
  • Rainbow sprinkles: I like to use rainbow sprinkles that are dye free
  • Almond extract: just a little to get the true funfetti flavor

Recipe Tips:

  • Healthy Protein Bites can be in the blender as well. Add oats, almond flour, coconut flakes, and protein to a blender and blend to fine flour. Add to a bowl and  stir in cashew butter and honey
  • Don’t have almond extract? Just use an extra 1/4 teaspoon vanilla extract 
  • You can substitute cashew butter with almond butter
  • Make it vegan by using maple syrup or another liquid sweetener
  • Don’t have collage peptides or vegan? Use 1-2 extra tablespoons of vanilla protein

Cake Batter Protein Bites

Ingredients
  

  • 1/2 cup oats
  • 6 tbsp almond flour
  • 1/2 cup shredded coconut
  • 1/4 cup vanilla protein
  • 2 scoops collagen peptides
  • 1/2 cup cashew butter
  • 1/4 cup honey
  • 1/2 tsp salt
  • 1/3 tsp vanilla extract
  • 1/4 tsp almond extract
  • rainbow sprinkles

Instructions
 

  • Add oats, almond flour, coconut flakes, protein, collagen peptides, and salt to a food processor and pulse till a smooth fine flour
  • Add in cashew butter, honey, and extracts and pulse until it forms a dough
  • Add in sprinkles and stir by hand (or make balls then roll into sprinkles)
  • Roll or scoop into bites and let set in the freezer to set for 15 minutes to an hour
  • Store in the fridge or freezer in an airtight container
