Chocolate peppermint bites are a healthy no-bake holiday treat that is high-protein, gluten-free, dairy-free, and so delicious.


Peppermint and chocolate are one of my favorite combos, something about the rich chocolate with the cooling mint just gets me every time. These chocolate peppermint protein balls are a delicious and healthy snack or dessert that is easy to prep and will put you in the holiday spirit. Made with simple healthy ingredients they are high in protein, gluten-free, and dairy-free.

Chocolate Peppermint Bites is made with:

  • Almond butter: Almond butter works best for the nut butter in this recipe as it goes well with the chocolate and is a neutral flavor
  • Coconut flour: Low glycemic index, high in fiber, and gluten-free flour
  • Cacao powder: raw cacao powder will give these a rich chocolate flavor that is filled with antioxidants, minerals, and vitamins
  • Protein: I use a chocolate protein in their recipe to add protein and make these treats more blood sugar balancing
  • Honey: a natural sweetener for a little extra sweetness to the recipe
  • Vanilla extract: adds a little richness if flavor but can be omitted
  • Peppermint extract: gives the peppermint flavor
  • Chocolate chip: for the outer coating I use a lower-sugar vegan chocolate chip mixed with a little coconut oil
  • Crushed candy canes: a little extra peppermint flavor that makes these the perfect holiday treat

Chocolate Peppermint Protein Truffles

Recipe Tips:

  • Use a cookie dough scoop to make evenly sized balls
  • Swap out the honey for another liquid sweetener if you don’t eat honey
  • I got my peppermint extract from Thrive Market
  • If you don’t have cacao powder you can swap it for cocoa powder
  • I like to use dye-free candy canes by Yum Earth
  • Store them in the freezer or fridge. You will have to wait a few moments for them to soften if stored in the freezer

Ingredients
  

  • 1 cup almond butter
  • 1/4 cup honey
  • 6 tbsp chocolate protein
  • 6 tbsp coconut flour
  • 2 tbsp cacao powder
  • 1/2 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1/2 tsp salt

Topping

  • 1/2 cup chocolate chips
  • 1/2 tbsp coconut oil
  • crushed candy canes

Instructions
 

  • Add all ingredients except the toppings into a bowl and mix to form a dough
  • Roll or scoop dough into balls and place on a lined pan or baking sheet
  • Put the protein truffles in the freezer to harden (about 10 minutes)
  • Melt chocolate chip and coconut oil in a small dish
  • Add candy canes to a plastic bag and crush them into small pieces
  • Put candy cane pieces in a small dish
  • Remove truffles from the freezer when they have hardened
  • Dip half of the truffle into the melted chocolate and then into the candy cane pieces
  • Put the truffles back on the tray and put the tray in the fridge or freezer to harden the chocolate
