Sweet and Spicy Salmon Roll Bowl
This quick and easy sweet and spicy salmon roll bowl comes together in under 30 minutes making it a perfect weeknight meal!
Ingredients
Salmon Roll Bowl
- 1 lb salmon filet
- 1 bag frozen cauliflower rice
- 12 oz frozen or fresh edamame
- mango salsa (homemade or store bought)
- 1-2 avocados
Spicy Mayo
- 3 tbsp mayo
- 1 tbsp sriracha
- 2 tsp coconut aminos
Instructions
- Prep your salmon and cook your salmon. I made air-fried maple sriracha salmon, but you can prepare salmon any way you like or use leftover salmon
- Make mango salsa or use a store-bought version. You can also peel and chop up mangos and forgo making the salsa
- Saute frozen cauliflower rice on the stove on medium with salt and pepper until cooked
- Steam or cook edamame as directed on the package
- Add cauliflower rice, edamame, salmon, and mango salsa to a bowl
- Add 1/4-1/2 avocado to each bowl
- Top with spicy mayo, coconut aminos, or sriracha to your taste
