Pancakes are for the weekends. I love making pancakes on the weekend, but don’t want a sugar crash or to be hungry an hour later, so I make these banana pancakes that taste delicious, balance my blood sugar, and give me energy for my day.

These paleo pancakes are made with a handful of healthy ingredients and are fluffy, moist, and tender. They are easy to make and a sweet way to start the day.

Ingredients
  

  • 2 ripe bananas
  • 1/2 cup almond flour
  • 1/2 scoop vanilla protein
  • 1 scoop collagen peptides
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/3-1/2 cup milk or water as needed

Instructions
 

  • Add all ingredients to a blender and blend to form a batter
  • Heat a skillet over medium-low heat until hot
  • Lightly oil skillet
  • Drop 1/4 cup batter for each pancake onto the hot skillet
  • Cook for a few moments until small bubbles begin to form on top
  • Carefully flip pancakes and cook the other side for 1-3 minutes
  • Serve warm with your favorite pancake toppings
